Lockdown & 'Sapori del mare'

Lockdown was hard for everyone but as we look back it’s maybe easier to reflect on some of the positives. I cannot remember a time, since I was a boy, when I sat at the table so regularly for family meals as I did through lockdown. As we move back towards our normal routine with work and school we’re trying our very best to keep that going. When I recently asked my oldest son whether there were any positives about lockdown, he answered, without any hesitation, the food. With time on our hands to spend in the kitchen, we ate well and I rediscovered my love of cooking…making pancakes and pizzas with my boys, baking bread and preparing fresh seafood, sourced from Bernard Corrigan Ltd (bernardcorrigan.com).
In my experience, whilst many people enjoy eating seafood, a lot of people are wary of cooking seafood at home. You might have missed your holiday by the sea this summer so why not bring the seaside into your home with the simple seafood dishes below.
Rinse the calamari rings in cold water and pat dry
Coat with flour, seasoned with a touch of salt and pepper
Place in hot vegetable oil and fry until light blonde (not golden as they will then be overcooked)
Serve with a slice of lemon
Place a good handful of fresh Scottish mussels into a pan with hot olive oil, then add crushed garlic and fresh chilli
When the mussels start to split, deglaze with a small cup of white wine and once that’s evaporated slightly add a ¼ cup of vegetable stock
Add 4 tablespoons of Celino’s sugo sauce
Cover with a lid and simmer until all the mussels have opened
Split the langoustine, wash and then crack the claws
Season with fresh finely chopped garlic, parsley and chilli
Place little knobs of butter on the meaty parts of the langoustine and season well with Maldon salt flakes
Place under a hot grill for 3-4 minutes until the juices run milky
Add a splash of wine, remove from the grill and leave to rest for a minute before serving with fresh lemon wedges
